Well, the time has come. I’m breaking the pumpkin seal. Hey, I made it all the way to the second week of October. And my CSA gave me two huge, gorgeous pumpkins in this week’s box, so what’s a girl to do? When you can’t beat ’em, join ’em.

Let’s ease into the pumpkin deluge with a cocktail for Sunday Funday. This one’s more of a dessert cocktail and will appeal to anyone with a sweet tooth, though it’s not overwhelmingly cloying. Pumpkin puree (fresh or canned) is vigorously shaken up with almond milk, spices, maple syrup, amaretto, and vodka – the result is a sweet but not too heavy drink that absolutely (drunkenly?) screams out fall.

I thought this was perfect with just a sprinkle of cinnamon on top, but if you really want to go full-bore into making it a dessert drink, you could also rim the glasses with graham cracker crumbs. However you serve it, you’ll definitely enjoy sipping it.

Ingredients
  • ⅔ cup unsweetened almond milk (or other non-dairy milk)
  • ⅓ cup fresh or canned pumpkin puree
  • 1 Tbsp maple syrup
  • ½ tsp pumpkin pie spice
  • 3 oz amaretto
  • 2 oz vodka
  • 7-8 ice cubes
  • Cinnamon, for garnish
Instructions
  1. Combine milk, pumpkin, maple syrup, pumpkin pie spice, amaretto, vodka, and ice in a cocktail shaker (if you don't have one, combine in a jar or large measuring cup).
  2. Shake vigorously for one minute to thoroughly combine (stir quickly with a spoon if you aren't using a shaker).
  3. Strain into martini glasses and garnish with ground cinnamon and/or cinnamon sticks. Serve.
